Butternut Squash Pizzas with Rosemary
Ingredients:
- 1 cup thinly sliced onion
- 1/2 butternut squash - peeled, seeded, and thinly sliced
- 1 teaspoon chopped fresh rosemary
- salt and black pepper to taste
- 3 tablespoons olive oil, divided
- 1 (16 ounce) package refrigerated pizza crust dough, divided
- 1 tablespoon cornmeal
- 2 tablespoons grated Asiago or Parmesan cheese
Procedure:
- Preheat oven to 400 degrees F (205 degrees C). Place sliced onion and squash in a roasting pan. Sprinkle with rosemary, salt, pepper, and 2 tablespoons of the olive oil; toss to coat.
- Bake in the preheated oven for 20 minutes, or until onions are lightly browned and squash is tender; set aside.
- Increase oven temperature to 450 degrees F (230 degrees C). On a floured surface, roll each ball of dough into an 8 inch round. Place the rounds on a baking sheet sprinkled with cornmeal (you may need 2 baking sheets depending on their size). Distribute squash mixture over the two rounds and continue baking for 10 minutes, checking occasionally, or until the crust is firm. Sprinkle with cheese and remaining tablespoon olive oil. Cut into quarters, and serve.
Sun Dried Tomato Focaccia
Ingredients:
- 1 cup water
- 3 cups bread flour
- 2 tablespoons dry milk powder
- 3 1/2 tablespoons white sugar
- 1 teaspoon salt
- 3 tablespoons margarine
- 2 teaspoons active dry yeast
- 1/2 cup chopped sun-dried tomatoes
- 2 tablespoons olive oil
- 2 tablespoons Parmesan cheese
- 2 teaspoons dried rosemary, crushed
- 1 teaspoon garlic salt
- 1 cup shredded mozzarella cheese
Procedure:
- Place water, flour, powdered milk, sugar, salt, butter or margarine, tomatoes, and yeast into bread machine in the order suggested by the manufacturer. Set to Dough cycle, and start the machine. Dough will be 1/2 pound.
- When the bread machine has finished the Dough cycle, take the dough out. Knead for 1 minute by hand. Place in an oiled bowl, and turn a few times to coat the surface of the dough. Cover with a damp cloth, and let rise for 15 minutes in a warm place.
- Dust a 10 x 15 inch baking tray with cornmeal. Roll out dough to fit the pan. Make indentations in the dough with your finger tips. Brush top surface with oil, and cover with a damp cloth. Allow to rise for 30 minutes.
- Sprinkle with parmesan, rosemary, garlic salt, and mozzarella.
- Bake at 400 degree F (205 degrees C) for 15 minutes, or until nicely browned. Cool slightly, and cut into squares for serving.
Crispy Rosemary Chicken and Fries
Ingredients:
- 8 chicken thighs
- 6 small red potatoes, quartered
- 1/2 cup extra-virgin olive oil, or as needed
- 1 tablespoon chopped fresh rosemary
- 1 1/2 teaspoons chopped fresh oregano
- 1 1/2 teaspoons garlic powder
- salt and pepper to taste
Procedure:
- Preheat the oven to 375 degrees F (190 degrees C).
- Place chicken and potatoes into a large bowl. Pour olive oil over them, and stir to coat. Scatter the chicken and potato pieces in a large baking dish, or cookie sheet with sides. Sprinkle with rosemary, oregano, garlic powder, salt and pepper.
- Bake for 1 hour in the preheated oven, uncovered. Baste during the last 15 minutes for extra crispness.
